I've owned a CB700SC Nighthawk. Good power, shaft drive, oil cooler, multi adjustable handlebars. Fairly comfortable, and still makes a good light sport touring ride.
I recently restored an FT500 Ascot (single) prior to my current GT500. Lots of parts out there, but a quirky reduction gear electric starter, heavy double walled exhaust system, and not a lot of power. I've owned several SR500 Yamahas and they were more fun to ride (and sounded better) than the FT Ascot. A VT Ascot, on the other hand, is supposed to be a sweet ride. Harder to find them, though.

What about a Honda with 'character'? (what!?) -Lots of them around, cheap, easy to get parts, vee-twin with more go than you'd think, indestructible, ugly as sin... Don't laugh!...
Yep, CX500 Honda.
Actually the later ones, such as '82 Eurosport are not ugly and have much better forks, brakes, mono rear suspension.

That blue CX is not bad looking, to my eye.
The ones we got in the States were oddly styled, even the ones that were dubbed "Silver Wings" prior to the scooter taking over the name. Good motor, reliable, comfortable-but just weird looking.

wish I could post some pics, my 1963 hawk is actually a cbm72 type II, its a high compression 250cc twin looks just like the American model (superhawk) but it has a 360 degree crank with twin carbs and 1 set of points, really rare odd model, my dad brought it back from japan when he was in the navy in the 60's, it sat in my grandmothers backyard until about 1992 when I got ahold of it and started the restoration. The cbm72 hawk was never meant for shipment to the states, my dad tore the bike down and shipped it back in a wooden box that he shipped as a coffee table
, then he reassembled it here and could only ride it off road because he couldn't get it titled. I restored it and it took forever to get all the paperwork and title for the states, (I actually had to go to court!) but it sounds really cool, the American model had a 180 degree crank with twin carbs and dual points,,ours has a 360 degree crank (both pistons go up and down at the same time) with twin carbs and 1 set of points, really weird.

I have a CX500 at home, one of the best running bikes I've ever owned. It's restored (lightly modded) and my wife rides it but I love the way the frame twists back and forth when you get on it. Yeah, the frames were designed a little goofy and odd that's for sure.
