I see you've been talking to Dave, since you mentioned the "Ultra Rare" concept. We coined that phrase a few years back for certain seemingly elusive GT parts :D . They are not that rare though, they do show up on Ebay for about $15 to $20. See if you have a spare you might care to part with.

im about to test the engine temp with a laser temp digi gauge. what part of the motor should i check? the headers?

what is normal operating temp? where is "the danger zone?"

I'm not sure, but I would think the cylinders. Exhaust is bound to be hotter than than the motor. My temp gauge and most others I have seen run just below the middle even on the hottest days.. If your motor shows to be hot shortly after you turn the key on, it's wired back asswards.

I believe to 'do it properly' you need a thermocouple screwed under each spark plug so you can watch temps dynamically. As I don't know how to do that, what I've done as a proxy is to paint a dot of matt black paint about 1/4inch diameter at the same spot just above the exhaust manifold, then use the IR thermometer to get an approximate reading, at idle and after a good blast (ride). The temp displayed may not reflect the actual temp but usually what I'm trying to ascertain is even temps across the cylinders.

I have tried IR pyrometers, CHT gauges etc and in the end if I want to know what the water temperature is I have to have an accurate temperature gauge and sender. The rest is nice but not addressing the issue. It's an attempt to determine whether an untested read out is in fact accurate.

There are many ways to approach this. One is to see if the sender is in spec, and then test the gauge as well. Another way is to replace the sender with a new unit and matching gauge and see what that reads. If a new digital gauge and matching sender suggests the temperature is high, then there really is an issue to resolve.
