I don't have an inside contact in the old Suzuki design office, so I have no idea what they were thinking, but that stud on early 72s looks like it's inserted into a aluminum insert. It looks almost as if they added a threaded boss and I'd speculate that they used a stud to stop the insert from coming looses. On later blocks the bridge there is cast in so I see no good reason to use a stud instead of a bolt.

Maybe someone else has some ideas as to why it was designed that way. Maybe it takes more upwards force from compression and needs to be stronger than the outer 8mm bolts. Try it and see. If it pulls out, insert and thread insert and fit a stud. :)
