Cooling System Bypass question

Hi all,
I recently picked up a rebuilt GT750 motor which has been modified, including porting according to the specs here:
http://smokeriders.com/Technical/Suzuki ... ocket.html" onclick="window.open(this.href);return false;" onclick="window.open(this.href);return false;
The motor was fitted to a competition 4-wheeler in its previous life. The mods also included removing the water bypass hose and the thermostat.
In the above-mentioned article there is a small mention of this mod:
"The bottom water bypass below the thermostat is to be blocked off since it is unnecessary. An automotive (Chrysler Corp.) thermostat of 180° is used. It's outer diameter is to be cut down to fit the Suzuki housing. "
Does this mean that the bypass hose is completely unnecessary? How can the coolant circulate if/when the thermostat is closed and there is no bypass?
Any insights very welcome!
