Hey,
Drained old oil from sitting for 25 years...
Cleaned pistons, got new rings, honed cylinders....
Before I pot all this back together should I be worried about sludgy oil?
How do I check?
Should I just flush it?
Does it have to be running to flush effectively?
Should I crack the case to clean it up ...or is there an oil pan or something?
-> opening it up scares the crap out of me.

You will need to be more specific - which oil are you talking about ? Assuming it runs, and you are asking about the gearbox oil, then what I'd do is check that it shifts through the gears, that the clutch works and then after it has warmed up I'd dump the oil and refill again with fresh oil.
