I have a 74/75 GT550 that's just been sitting around waiting for me to focus on it. Just purchased an AGM battery to see if it starts up. Can I just pop it in there and start up (hopefully)? Or do I have to do anything to make sure the AGM will work with the bike?

An AGM battery will work fine.
Just check the voltage after the bike is running. You may have to adjust the voltage regulator because they are more sensitive to over voltage. Voltage at revs with a charged battery should be 14.2 to 14.5V.
