I have fitted new VM32 Mikuni's on my newly rebuilt 1974 T500 and they seem to be running well. I am using the early model T500 short inlets as the long ones in these pics didn't work at all...

Stable idle is high, like 2300rpm and I am having trouble dialing it down, any recommendations?

Carbs may need supporting or the fuel in the floatbowls can froth causing slightly weak mixture, or possible air leak between carb and barrel? Spray carb cleaner in this area and if tickover changes, there's the leak.
Carbs may also lean backwards slightly changing fuel level.

I'm assuming that you did use proper clamps on the rubbers? None shown in picture. Also make sure adjustment of throttle cables is not stopping slides from seating fully
