The problem with all this parting out is that theres only so many bikes still 'alive' to accept this influx of parts. To add to this theres only certain parts these 'alive' bikes really need, which means the rest of the bits and pieces of no importance get tossed somewhere.
The end result is more major parts, less running bikes, and lots of missing bits and pieces that could recreate another full running bike.
This is insane, but then a lot of new sellers seem to think the latest big business is the quick money parts on ebay.
